This was a first time dinner in my house , it was a big hit with everyone. Each month my team and I run a clean eating challenge , this was one of the recipes. I try to make sure my family approves of the meal before I add it to the challenge menu! Try it out and let me know what you think!
Ingredients – Serves 4
2 large zucchini
1 yellow onion, chopped
4 cloves of garlic, chopped
4 carrots, peeled and chopped
1 lb lean ground beef
1 can of diced tomatoes, drained
1/2 cup of no sugar added marinara sauce
Optional: extra veggies! Clean out your fridge! Mushrooms, chopped bell pepper, spinach, any veggie would be good to throw into this sauce.
Using a spiralizer mandolin slicer, or veggie peeler, turn your zucchini into zoodles
Transfer zoodles to a large glass bowl and microwave for 4-5 minutes, until softened.
Add 1 T olive oil to a large pan over medium heat and sauté the onions, garlic, carrots and extra veggies until soft.
Add the beef and continue to cook until browned.
Drain your diced tomatoes and add them to the pan with the marinara sauce.
Heat through, and serve over zoodles!
