For the record I’ve never smoked crack or sniffed it or whatever else you can do with it ūüôą but all I can say this was AMAZING! Like aaaa-may-ZINGGG! It’s so simple to make and packed with flavor.I prep this for weekly lunches for myself and my husband it so yummy!

Instant Pot Crustless Pizza Casserole – 21 Day Fix Approved

Another delicious, simple , healthy crowd pleasing pizza casserole that’s good for you! My whole family enjoyed this one , I will be adding it to our monthly meals!

Just going to say this pizza recipe can be made in the instant pot or the crock pot. The choice is yours! I have done it both ways and prefer the instant pot! The pizza casserole is full of flavor, you can pretty much add any ingredients to your liking. Like with my My Other Instant Pot Casserole I added some turkey pepperoni since my kids love them. I think the next time I make this I may make it more like a supreme pizza, I love veggies! My kids are starting to think all we eat is pizza, hey at least its healthy!

To cook in a crock pot I browned the meat prior to placing in the crock pot. Once meat is in the crock pot , spread it out evenly. mix all seasonings with the tomato sauce then pour over the meat. Top with cheese and your choice of toppings. Cook on low heat for 4 hours then serve and enjoy! I hope you try this out and enjoy!


Another way to make this if you don’t have both ground turkey and sausage another great option is to use 2 pounds of ground meat. I have seen recipes that used that instead of half ground meat half sausage! Or you can make it strictly veggies! What I love about this is you truly can make it to your liking or family needs!!! Healthy Hasselback Chicken – 21 Day Fix Approved

My wonderful husband has been requesting I try new recipes and spice things up around our house…. I could be irritated or flattered that he loves my cooking and has faith in me to create some yummy new dinners. Challenge accepted and we now have Hasselback chicken. First time ever making it , I was surprised how simple it was! I hope you enjoy!


What You Need РMakes 4 Servings 

  • 2 large boneless/skinless chicken breast (mine were big enough to make 2 servings with each breast)
  • 2 cups fresh spinach
  • 1 tsp olive oil
  • 3/4 cup Ricotta cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp Himalayan salt
  • 1 tsp paprika
  • 1/2 shredded cheese



  • Using a sharp knife , make slits in the chicken but make sure to not cut all the way through the chicken you should have about 7 or 8 slits with large chicken breasts
  • pre heat oven to 375 degrees
  • in a medium skillet add 1 tsp of olive oil and spinach over medium heat
  • once spinach is wilted , add in ricotta cheese, garlic powder, onion powder and Himalayan salt
  • cook until mixture is melted
  • remove spinach mixture from the stove, then stuff the slits of the chicken evenly
  • sprinkle chicken with paprika , you can also add more garlic powder onion powder and salt if you choose
  • sprinkle each chicken breast with 1/4 cup shredded cheese
  • place chicken in a casserole dish, i sprayed the bottom with coconut oil cooking spray
  • put chicken in oven and ¬†cook for about 25 minutes or chicken is no longer pink
  • i also broiled for a few minutes to make the cheese crispy! So yummy!
  • enjoy!

Healthy Crock Pot Italian Tortellini Soup – 21 Day Fix Approved

Cold weather has set in here in Indiana and my need to cook cozy comfort foods is full-blown! I have said before growing up my best friend was Italian and her grandmother cooked the best Italian foods ever. This soup was adapted from one of grandmas recipes and I¬†made a few tweaks to it that didn’t affect flavor or how yummy it is! Best part it gets thrown in the crock pot!!!!!i hope you enjoy it!!!!


What You Need – makes 8 servings

  • 5 garlic cloves , minced
  • 1 onion chopped
  • 1/4 cup fresh basil finely chopped
  • 2 quarts organic low sodium chicken broth
  • 16 oz turkey sausage , casings removed
  • 28 oz crushed tomatoes
  • 2 cups spinach leaves
  • 14 oz diced tomatoes
  • 2 Tbsp of tomato sauce
  • 1/4 cup shredded parmesan cheese
  • 1 package refrigerated whole wheat cheese tortellini


Putting It Together –

  • In a large skillet with a little Evoo add sausage and brown for 8-10 minutes ,break into small pieces
  • Saute, onions and garlic in the same skillet until tender. Season with a little italian seasoning, salt and pepper
  • Add all the ingredients except the tortellini to crock pot¬†Cook on low for 3-4 hours, or all day.
  • Right before dinner time, cook the tortellini according to package instructions. Then add to the soup.
  • Use a GREEN container (or 1 cup) to portion your soup. Then add the parmesan cheese to each bowl

Crock Pot Chicken White Bean Pumpkin Chili – 21 Day Fix Approved

Every year when the weather gets cooler I go into cooking mode, like when your pregnant you nest I bake ha ha! I have been trying new recipes this week while we had a lighter sports schedule I took advantage of the free time! This chili is delicious and my whole family ate it! Enjoy!


What You Need – Makes 6 Servings

1/2 tablespoon olive oil
1 pound lean ground chicken or ground turkey (I used Shredded Chicken left over)
1 small onion, chopped
1 jalapeno pepper, minced (seeds and membranes removed for less spicy)
3 garlic cloves, minced
1 ¬Ĺ teaspoons chili powder
2 bay leaves
1 1/2 teaspoons cumin
1 teaspoon oregano
1/4 teaspoon cinnamon
¬Ĺ teaspoon each salt and black pepper, or to taste
1 (15 oz can) white great northern, rinsed and drained
1 (15 oz can) navy beans, rinsed and drained
1 (15 oz can) pumpkin puree (not pumpkin pie filling)
1 (7 oz) can chopped green chiles
2 cups low sodium chicken broth


Optional Toppings –

chopped cilantro
chopped green onions
greek yogurt (plain)
tortilla chips


Putting Together –

Heat 2 teaspoons oil in a large saute pan over high heat. Add ground turkey or chicken  and cook, breaking it up with a wooden spoon, until cooked through and no longer pink, about 5-6 minutes.  Add to crock pot.

Add¬†remaining oil to saute pan. Add in onions and jalapeno; saute for 2-3 minutes. Add in garlic and¬†saut√©¬†for an additional 1 ‚Äď 2 minutes.¬†Add¬†cooked vegetables to crock pot.

To crock-pot add herbs and spices, beans, pumpkin puree, green chilies and broth. Cover and cook on high for 4 hours or low for 7-8 hours.

Remove bay leaves and adjust seasonings to taste, if needed.

Garlic Chicken & Spinach Skillet – 21 Day Fix Approved

Eating healthy with a busy schedule can be tough I am realizing this now that both boys are in 4 sports  between the two of them prepping and planning is my savior! This meal is very simple and quick to throw together perfect for those double headers on Saturdays or even in the middle of the week!Enjoy

Ingredients – Serves 4

1 tbsp Extra Virgin Olive Oil (EVOO)
6 cloves minced garlic
1/2 cups shredded parmesan cheese
1 cup mushrooms, sliced
2 cups spinach
2 Lbs chicken breast cut into cubes
Sea salt and Black pepper to taste
Putting it together –
Saute’ garlic and mushrooms in EVOO for a minute or two
Add chicken pieces, salt, and cook until no longer pink in the middle.
Make sure to stir chicken to coat with EVOO and garlic
Add parmesan cheese and stir until the chicken is coated.
Add spinach and cook until wilted
Serve by itself or over whole wheat pasta ( I loved it as is)

Classic Meatloaf – 21 Day Fix Approved

Growing up my step dad did most of the cooking (he is a really good cook) and meat loaf was a weekly dinner. You would think we would have gotten sick of it but it was so delicious!!! I have been trying recipes each week to try to recreate it, I am HAPPY  to say I finally have nailed it! Of course it always tastes better when the person makes it but my step dad is in California so kinda hard lol! I hope you all enjoy it!!!!


Ingredients: Makes 6 Servings
1¬Ĺ lbs. raw 95% lean ground beef (or turkey)
1 large egg
1 clove garlic, finely chopped
1 medium onion, chopped
¬ĺ medium green bell pepper, chopped
1 medium celery stalk, chopped
¬Ĺ cup all-natural tomato sauce
1 cup whole-grain bread crumbs (optional)
1 tsp. Dijon mustard
1 Tbsp. dried parsley
Sea salt and ground black pepper to taste

1. Preheat oven to 350¬į F.
2. Combine beef, egg, garlic, onion, bell pepper, celery, tomato sauce, bread crumbs, mustard, and parsley in a large bowl. Season with salt and pepper if desired; mix well with clean hands.
3. Place mixture in loaf pan. Bake for 50 to 60 minutes or until cooked through.

Serve with vegetable of choice and enjoy!

Zoodles with Beef and Veggie Bolognese Sauce

This was a first time dinner in my house , it was a big hit with everyone. Each month my team and I run a clean eating challenge , this was one of the recipes. I try to make sure my family approves of the meal before I add it to the challenge menu! Try it out and let me know what you think!

Ingredients – Serves 4

2 large zucchini

1 yellow onion, chopped

4 cloves of garlic, chopped

4 carrots, peeled and chopped

1 lb lean ground beef

1 can of diced tomatoes, drained

1/2 cup of no sugar added marinara sauce

Optional: extra veggies! Clean out your fridge! Mushrooms, chopped bell pepper, spinach, any veggie would be good to throw into this sauce.


Using a spiralizer mandolin slicer, or veggie peeler, turn your zucchini into zoodles

Transfer zoodles to a large glass bowl and microwave for 4-5 minutes, until softened.

Add 1 T olive oil to a large pan over medium heat and sauté the onions, garlic, carrots and extra veggies until soft.

Add the beef and continue to cook until browned.

Drain your diced tomatoes and add them to the pan with the marinara sauce.

Heat through, and serve over zoodles!

Skinny Chicken Parmesan – 21 Day Fix Approved

When I think of Italian food my heart races with excitement , really it does. However Italian food tends to be a little on the heavy side at times. I have realized since I started the 21 Day Fix , that I can make almost any favorite dish a healthy one! Chicken parmesan is one of Craig’s favorite Italian meals, so i knew I had my work cut out! Not only was it delicious it was so simple to make! Oliver gave it the two thumbs up , had seconds and then said when are you making more! Craig’s response ” You Do good work Wife” I am impressed ha ha silly husband! Enjoy!



Ingredients – Serves 4
  • 1 pound of boneless/skinless chicken breasts, Thin sliced
  • 1/4 ¬†whole wheat Panko crumbs
  • 10 T ¬†fresh grated Parmesan cheese, divided
  • 2 egg whites
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 1/8 tsp lemon pepper
  • 1/4 tsp garlic powder
  • 8 T No sugar added marinara sauce


  1. Preheat oven to 450 degrees
  2. Break open eggs into a shallow dish and scramble well.
  3. In a medium mixing bowl, combine bread crumbs,  2 T Parmesan cheese, sea salt, black pepper, lemon pepper and garlic powder
  4. Dip each side of chicken breast into the egg and then into bread crumb mixture.
  5. Place in a large baking dish.
  6. Bake at 450 degrees for 20 minutes, flip and bake for  about 10 minutes
  7. Add 2 T marinara & 2 T Parmesan cheese, broil on high  for about 2 minutes
  8. let cool and serve , I served with fresh green beans and a salad ūüôā

Cheesy Sun Dried Tomato Chicken Bake – 21 Day Fix Approved

I absolutely love spaghetti squash so anytime I can make a dinner with it I will! My entire family loves my Sun Dried Tomato Chicken Pasta so much I thought I would change-up the recipe slightly. The hardest part for me is getting the spaghetti squash cooked perfectly. This is packed with flavor and I am sure your entire family will love it!


What You Need ‚Äď Makes 6¬†servings¬†

1 Lb boneless / skinless chicken breasts
1 cup container sun-dried tomatoes chopped (buy the ones that come in the zipper bag, not the kind in a jar soaking in oil…I found these in the produce section)
2 cups of fresh basil
1 tsp Evoo
8 ounces no sugar added tomato sauce
1 tsp garlic powder ( I added a few extra shakes )
1/2 tsp sea salt
1/8 tsp red pepper flakes ( my husband and I both added more once we dished our serving , so it was not to hot for our boys)
1 spaghetti squash , cooked and shredded

1 1/4 cup Shredded cheese


Instructions –

Pre heat oven to 350

Cut your spaghetti squash in half and remove the seeds. Place face down in a microwave safe dish with a small amount of water and microwave about 12-14 minutes or until fork tender.

In a large skillet spray pan with non stick spray, cook chicken throughly so there is no pink

Cut chicken into cubes, set aside in a mixing bowl

Blend the sun-dried tomatoes, garlic, sea salt, red pepper flakes , tomato sauce and basil in a food processor and blend until the tomatoes are finely chopped

Transfer the mixture to bowl of chicken

Add in shredded spaghetti squash , mix well

In a 9×13 casserole dish¬†, spread the mixture evenly throughout dish

Sprinkle the shredded cheese over entire dish

Cover with foil and bake for 15-20 minutes until cheese is melted, uncover and bake an additional 5 minutes until bubbly.

Let cool and serve
