Let’s just say this Spaghetti Squash Pad Thai is a must-try! It’s a low carb, clean up version of the original and was a huge hit at home!  Who needs unhealthy take-out? This dish is delicious and guilt-free! I also love how easy it is to customize with your choice of protein. It’s sure to be a crow pleaser, even for the picky eaters :)The flavors are similar to the traditional dish you can get at any night market or noodle stall in Thailand; there’s tamarind paste, eggs, bean sprouts, peanuts, and lots of garnishes

One cup of cooked spaghetti squash only has 42 calories, compared to a cup of cooked pasta with over 200 calories. It only has 10 grams of total carbs, which is 1/4 the amount you get from pasta. You’ll also get 9% of the recommended daily intake of dietary fiber, also delivering a range of nutrients, including vitamins C and A, Potassium & Calcium. Spaghetti squash contains a fair amount of fiber,  Fiber also helps with weight reduction as it makes you feel fuller longer.

The fact that spaghetti squash has a lot of potassium makes it the ideal diet for people with blood pressure. It can amazingly lower high blood pressure if consumed over time. The folate contained in the spaghetti squash helps in strengthening the walls of blood vessels besides enhancing blood circulation. Potassium is a mineral that maintains proper muscle and nerve function, and it is also found in spaghetti squash, making it helpful for people with high blood pressure. Instant Pot Crustless Pizza Casserole – 21 Day Fix Approved

Another delicious, simple , healthy crowd pleasing pizza casserole that’s good for you! My whole family enjoyed this one , I will be adding it to our monthly meals!

Just going to say this pizza recipe can be made in the instant pot or the crock pot. The choice is yours! I have done it both ways and prefer the instant pot! The pizza casserole is full of flavor, you can pretty much add any ingredients to your liking. Like with my My Other Instant Pot Casserole I added some turkey pepperoni since my kids love them. I think the next time I make this I may make it more like a supreme pizza, I love veggies! My kids are starting to think all we eat is pizza, hey at least its healthy!

To cook in a crock pot I browned the meat prior to placing in the crock pot. Once meat is in the crock pot , spread it out evenly. mix all seasonings with the tomato sauce then pour over the meat. Top with cheese and your choice of toppings. Cook on low heat for 4 hours then serve and enjoy! I hope you try this out and enjoy!

 

Another way to make this if you don’t have both ground turkey and sausage another great option is to use 2 pounds of ground meat. I have seen recipes that used that instead of half ground meat half sausage! Or you can make it strictly veggies! What I love about this is you truly can make it to your liking or family needs!!! Who doesn’t love pizza? I mean honestly it’s not my favorite thing to eat but I do enjoy it on occasion. I made a lasagna with zoodles Click Here for the recipe that was super yummy and a huge hit in our house. The cauliflower rice i found at Costco I had to try making a similar dish to see if my family would eat it! The verdict is in and they all love it! Seriously so simple to make and the best part for everyone following the 21 Day Fix containers there are no yellows!!! So try it out let me know how you like it!!!!! Enjoy

 

Also you can really tweak the meat and veggies you add to this i chose sausage and turkey pepperoni because it’s what my kiddos love on pizza!

Healthy Sausage Gravy – 21 Day Fix Approved

My husband loves biscuits and gravy more than any food even pizza! The first time I made this for him I was sure he would pick it apart and tell it’s not the same lol! Oh how I was wrong he loved it , and now its become a routine breakfast on the weekends! I love how I can take everyday favorites and create a healthier version for my family! Makes this mama’s heart full! Enjoy!

 

What You Need – Makes 6-8 1/3 cup servings

  • 1 pound of lean ground turkey breast
  • 1 TBS sage
  • 1/2 tsp salt
  • 1/2 tsp garlic
  • 1/4 tsp fennel seed
  • 1 TBS coconut oil
  • 1/4 cup whole wheat flour
  • 2 cups unsweetened plain almond milk
  • black pepper, to taste

 

Putting It Together –

  • In a medium bowl mix the ground turkey with the sage, salt, garlic, and fennel seed
  • Melt the coconut oil in a  sauce pan over medium heat
  • Brown the ground turkey , breaking up into small pieces
  • Stirring frequently to make sure it  doesn’t burn to the pan
  •  After the turkey is fully cooked, sprinkle with the flour and stir
  • Pour the milk over the ground turkey/flour mixture
  • Bring to a slight boil than lower the heat to medium/low
  • Continue to stir as it thickens.  As it cools it will thicken more as well. Season with pepper to taste
  • I served over eggs for myself but here is a recipe for clean eating biscuits I made my husband Clean Eating Biscuits

Healthy Chicken & Dumplings – 21 Day Fix Approved

My memaw makes the absolute best chicken and dumplings and I am 100% certain there is no way to recreate in a healthier version. I am not going to lie I tried ha ha! However My husband came up with a recipe that works now of course it’s not memaw’s but its DELICIOUS!!!! Enjoy!

 

What You Need –

  • 3 boneless, skinless, chicken breasts
  • 16oz unsalted chicken broth
  • 32oz of water
  • 2 tsp pepper
  • 2 tsp sea salt
  • 2 tsp rosemary
  • 2-3 Bay leaves
  • 2 tbsp minced garlic
  • 2 handfuls of mushrooms
  • 1 medium-sized onion
  • 1 lb. frozen mixed veggies

 

For the dumplings –

  • 1-1/2 cup whole wheat flour
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tbsp olive oil
  • 3/4 cup almond milk (non fat works well too)

 

Putting it all together –

  • In a large pot add chicken, broth , water and seasoning
  • Bring to a boil , over medium heat and cover the pot
  • Boil until chicken is completely cooked and is falling apart (about an hour or so)
  • Add veggies , reduce heat and cover the pot continue cooking for 45 min or so

For the dumplings –

  • In a large bowl whisk together flour, sea salt, and baking soda. Pour in the olive oil and cut into the flour mixture with a fork. Slowly add milk and stir with a large spoon until flour mixture is moist
  • Using a tablespoon, drop dumplings into the broth. Make sure the dumplings stay on top and don’t get mixed in with the chicken and veggies. Cook on medium for 30 min or until dumplings are thoroughly cooked in the center (Make sure broth is boiling slightly before adding dumplings)
  • Remove bay leaves and enjoy

Healthy Spinach & Ham Egg Cups 21 Day Fix Approved

Ingredients –

  • 1/2 cup red onions, diced
  • 2 garlic cloves, minced
  • 1/2 cup spinach, sautéed
  • 2 tablespoon 2% cottage cheese
  • 1 tablespoon nonfat Greek yogurt
  • 1/2 cup shredded cheese
  • Freshly ground black pepper, to taste
  • Olive oil or coconut oil cooking spray
  • 12 eggs
  • 12  thin slices of low-sodium deli ham
  • Chives, chopped for garnish

 

Directions –

Pre heat oven to 350 degrees

  • Spray muffin tin with cooking spray ( I use coconut oil cooking spray)
  • In a blender , blend the cottage cheese and yogurt , set aside
  • In a medium saucepan add the onions and the garlic  over medium heat and cook until tender. Stir in the spinach and sauté until slightly wilted
  • Remove from heat, stir in the blended cottage cheese mixture, the cheese, and season with freshly ground black pepper
  • Place 1 slice of ham in each muffin  opening , form a cup with it
  • Spoon the spinach mixture into each ham cup evenly
  • Crack an egg over each cup then sprinkle  ground black pepper
  • Bake for 15-20 minutes
  • serve and enjoy

 

**Bonus Tip** 

These Freeze very well! I prep a big batch at a time!

Crock Pot Chicken White Bean Pumpkin Chili – 21 Day Fix Approved

Every year when the weather gets cooler I go into cooking mode, like when your pregnant you nest I bake ha ha! I have been trying new recipes this week while we had a lighter sports schedule I took advantage of the free time! This chili is delicious and my whole family ate it! Enjoy!

 

What You Need – Makes 6 Servings

1/2 tablespoon olive oil
1 pound lean ground chicken or ground turkey (I used Shredded Chicken left over)
1 small onion, chopped
1 jalapeno pepper, minced (seeds and membranes removed for less spicy)
3 garlic cloves, minced
1 ½ teaspoons chili powder
2 bay leaves
1 1/2 teaspoons cumin
1 teaspoon oregano
1/4 teaspoon cinnamon
½ teaspoon each salt and black pepper, or to taste
1 (15 oz can) white great northern, rinsed and drained
1 (15 oz can) navy beans, rinsed and drained
1 (15 oz can) pumpkin puree (not pumpkin pie filling)
1 (7 oz) can chopped green chiles
2 cups low sodium chicken broth

 

Optional Toppings –

chopped cilantro
chopped green onions
greek yogurt (plain)
tortilla chips

 

Putting Together –

Heat 2 teaspoons oil in a large saute pan over high heat. Add ground turkey or chicken  and cook, breaking it up with a wooden spoon, until cooked through and no longer pink, about 5-6 minutes.  Add to crock pot.

Add remaining oil to saute pan. Add in onions and jalapeno; saute for 2-3 minutes. Add in garlic and sauté for an additional 1 – 2 minutes. Add cooked vegetables to crock pot.

To crock-pot add herbs and spices, beans, pumpkin puree, green chilies and broth. Cover and cook on high for 4 hours or low for 7-8 hours.

Remove bay leaves and adjust seasonings to taste, if needed.

Healthy Zucchini Bread – 21 Day Fix Approved

I am a huge fan of zucchini bread, my husbands memaw makes the best zucchini bread ever! I really could sit and eat the entire loaf if i had no self-control lol. II knew I had to find an alternative that followed my plan , I was hesitant at first but after trying this recipe from beachbody I was sold! Try it out and let me know how you like it!

 

Ingredients –
Nonstick cooking spray
6 large egg whites
¼ cup melted coconut oil
½ cup unsweetened applesauce
1/3 cup sugar
2 tsp. vanilla extract
¾ cups coconut flour
1¾ cups whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
¾ tsp. sea salt
3 tsp. ground cinnamon
2½ cups grated zucchini
½ cup chopped raw walnuts

 

Putting Together –

1. Preheat oven to 350° F.
2. Lightly coat two 9 x 5-inch loaf pans with spray.
3. Combine egg whites, oil, applesauce, sugar, and extract in a large bowl. Set aside.
4. Combine coconut flour, whole wheat flour, baking powder, baking soda, salt, and cinnamon in a medium bowl; mix well.
5. Add flour mixture to egg mixture; mix until just blended.
6. Fold in zucchini and walnuts; mix until just blended.
7. Divide batter evenly between the two pans.
8. Bake for 45 to 50 minutes, or until golden brown and tester inserted into the center comes out clean.
9. Cool bread in pans for 5 to 10 minutes, remove from pans and transfer to rack; cool completely

** Left over slices wrap individually and freeze!**

21 Day Fix Salsa Verde Enchiladas

Mexican food is a staple in my house, we all love it. Last year I made 21 Day Fix Enchiladas with a traditional red sauce, my husband said he would love to have a green sauce option as well. Challenge accepted! Now making the green sauce is an extra step but you can double it and freeze for the future! Enjoy!!!!

For The Sauce –

1 Tsp Olive Oil
1 Small Onion – sliced (I used 1/2 a yellow and 1/2 a red onion)
3 Garlic Cloves – minced
1 Green Bell Pepper – seeded
1 Jalapeno – seeded
approx 8 tomatillos – husked & rinsed
1/4 bunch of cilantro
1 tsp. salt
1 tsp. cumin
2 c. chicken broth

In a large pot saute onion and minced garlic in the olive oil until onions are transparent
while that is sauteing grab a blender and start cutting and seeding your veggies and husking the tomatillos
Place them all in the blender When onion and garlic is done, add those in the blender as well
Blend all the veggies and chicken broth together, leave out the salt and cumin
Blend until smooth and transfer the blended sauce into the large pot, add the salt and cumin
Simmer on medium for 10-15 min or until desired consistency\
 Enchilada Mix – Makes 12 Enchiladas 
1 Rotisserie Chicken (shredded, filled about 5 RED containers)
3/4 cup  plain Greek Yogurt
12 – 6 inch corn tortillas
1 1/2 Cup shredded cheddar cheese for topping
Directions –
Preheat oven to 350
Layer bottom of 9×13 pyrex with green enchilada sauce
Mix chicken and greek yogurt Spoon approx 1/2 Red Container of mixture on warmed corn tortilla and roll up repeat for all 12 tortillas
 Line rolled enchiladas in baking dish, cover with enchilada sauce and sprinkle on cheese
Cover with foil
Bake for 20 minutes covered. Remove foil and bake another 5-10 minutes until cheese is melted and heated all the way through
Let cool and enjoy!

Healthy Queso Dip – 21 Day Fix Approved

Queso dip is a favorite of mine , since following the 21 Day Fix the last 2 years I have had it maybe 5 times as cheat 🙂 I kept telling myself there has got to be a way to make it healthy , I stumbled upon a recipe from http://cleaneatingmag.com and it gave me the inspiration to try this! I bet you are thinking cashews no way make a Queso lol but i promise you wont be disappointed! Its full of flavor that will make you want to lick the bowl clean! Enjoy

 

Ingredients: Makes 12 servings (2 Tbsp each)
1 cup raw cashews
3 cups water, divided use
2 Tbsp. tomato paste, no sugar-added
1 tsp. chili powder
½ tsp. smoked paprika
⅓ cup nutritional yeast
¾ tsp. sea salt (or Himalayan salt)
2 Tbsp. fresh lemon juice

Preparation:
1. Place cashews and 2 cups water in a medium bowl. Let soak for up to 3 hours. Rinse and drain.
2. Place drained cashews, remaining 1 cup water, tomato paste, chili powder, paprika, yeast,, salt, and lemon juice in a blender (or food processor); cover. Blend until smooth, scraping down sides of blender if needed. Add additional water if needed.
3. Keep refrigerated for up to five days.
