For the record I’ve never smoked crack or sniffed it or whatever else you can do with it 🙈 but all I can say this was AMAZING! Like aaaa-may-ZINGGG! It’s so simple to make and packed with flavor.I prep this for weekly lunches for myself and my husband it so yummy!

21 Day Fix Lemon Bars

Its Easter weekend and I am in full baking mode! I made these last year sometime and decided that I needed to blog them and share the goodness of these Lemon bars. They are so yummy , its hard to stop at just 2! They are packed with flavor will leave your taste buds screaming for more!

Lemon bars will never be health food, but they will always be delicious—and if you’ve just gotta have a square of sweet-tart, chewy, lemony goodness, your best bet is to make them from scratch and shun the additives you’ll get with store-bought boxed mixes. This recipe is about as clean as lemon bars can get.

I will tell you that these are fairly soft in the middle. They do not set like a traditional lemon bar. But they do set enough to get them cut and plated, and boy are they delicious! The cashew crust gives them some chew and the lemon juice flavor comes through nice and tart. It’s a fantastic combination!

So typically my boys are not fans of lemon type desserts , they enjoy sucking juice out of lemons but that’s about it. This recipe won them over in a big way! Now I wont be making these often because it is so hard to stop at just 2 squares , I am thinking next time I make them I will cut them into smaller pieces that way I feel like I am getting to eat more! Ha ha its all mind over matter right! So I really hope you try these out and enjoy! Please let me know how they turn out!

French Onion Chicken – 21 Day Fix Approved

French onion soup is a type of soup usually based on meat stock and onions, and often served gratinĂ©ed with croutons and cheese on top or a large piece of bread.It has always been one of my absolute favorite soups but it’s not exactly the healthiest. insert let’s make a healthy version and add a twist…French Onion chicken in the skillet! I am sure this could be made in the slow cooker or instant pot as well!

Now to make it gluten-free just use a gluten-free flour or you can omit the flour. I only used it to thicken it up , if you do omit the flour it will be a little more runny but still delicious! I was certain my boys would not want to eat this because of the onions but they proved me wrong! Both boys devoured it and my husband has asked for it to be made weekly lol! I guess this is a winner! try it out and let me know what you think!

Healthy Chicken Chow Mein – 21 Day Fix Approved

I love how versatile food can be. Seriously, real food can be so, so simple, but it can also be used for a never-ending variety of meals. I’ve recently discovered how versatile spaghetti squash can be. Brings me to Spaghetti Squash Chow Mein. I know your thinking are you kidding me Jamie? Trust me I struggled with the thought of this as well but decided to try it out anyways. This recipe makes a lot of food, which is always awesome because then you get to use the leftovers. And let me tell ya, the leftovers are almost better than the original recipe. Don’t you just love when food tastes better the second time around?!


So I added leftover chicken to mine however you can add any meat you choose or add in more veggies! I love that this meal can be so versatile and everyone will enjoy

Buffalo Cauliflower Bites – 21 Day Fix Approved

Baked buffalo cauliflower bites are a spicy , healthy , vegetarian , delicious alternative to chicken wings! Serve this easy appetizer with carrot sticks, celery and your favorite ranch or blue cheese dressing.Lets be real here I love me some boneless buffalo chicken wings however my waist says different ha ha! This recipe can be made with chicken instead of cauliflower , I have made it both ways I prefer cauliflower because I know my kiddos are getting another serving of veggies! Yep both kids ate these up and loved them! They have grown to love spicy! They both drink shakeology daily as well which I love but its a mom win when they are eating such nutritious veggies!!!


Seriously Addictive! I made these as an appetizer for the playoffs this year and they were so good! We couldn’t get enough of them and I loved that I was getting al the Buffalo flavor I wanted but I didn’t have to feel guilty about eating a lot of wings because I was eating veggies! Pros: Fast and a yummy way to get veggies! Cons: Not enough!

Let’s just say this Spaghetti Squash Pad Thai is a must-try! It’s a low carb, clean up version of the original and was a huge hit at home!  Who needs unhealthy take-out? This dish is delicious and guilt-free! I also love how easy it is to customize with your choice of protein. It’s sure to be a crow pleaser, even for the picky eaters :)The flavors are similar to the traditional dish you can get at any night market or noodle stall in Thailand; there’s tamarind paste, eggs, bean sprouts, peanuts, and lots of garnishes

One cup of cooked spaghetti squash only has 42 calories, compared to a cup of cooked pasta with over 200 calories. It only has 10 grams of total carbs, which is 1/4 the amount you get from pasta. You’ll also get 9% of the recommended daily intake of dietary fiber, also delivering a range of nutrients, including vitamins C and A, Potassium & Calcium. Spaghetti squash contains a fair amount of fiber,  Fiber also helps with weight reduction as it makes you feel fuller longer.

The fact that spaghetti squash has a lot of potassium makes it the ideal diet for people with blood pressure. It can amazingly lower high blood pressure if consumed over time. The folate contained in the spaghetti squash helps in strengthening the walls of blood vessels besides enhancing blood circulation. Potassium is a mineral that maintains proper muscle and nerve function, and it is also found in spaghetti squash, making it helpful for people with high blood pressure. Spaghetti Squash Meatball Cups – 21 Day Fix Approved

These bite-sized meatball cupcakes made from spaghetti squash are a tasty alternative to traditional spaghetti and meatballs.As much as I love a big plate of pasta (carbs are my spirit food) I also try to eat them in moderation ha ha! Some people love chocolate I love pasta and bread! Spaghetti squash is a tasty, healthy alternative. As a pasta lover to the core, I found I enjoyed these even more with the squash than I would have with traditional noodles. The squash provides a natural sweetness and tenderness that tastes delicious with the hearty meatball and tomato sauce. My boys thought these were fun to eat like a “cupcake” , they both love meatballs so I knew it would be a hit! The husband enjoyed them as well however I think he would prefer a big plate of spaghetti squash and meatballs lol!

Instant Pot Mocha Rubbed Roast – 21 Day Fix Approved

I love a good roast recipe , normally I would use my crock pot to make it. However i had to try it in the instant pot , I tell you what I have never tasted a more delicious roast in my life. The fact that it took less than an hour is amazing! I came home from baseball practice through it all together and bam dinner on the table and 3 happy boys! I cannot say enough good things about the instant pot , its been a complete game changer for meal prepping and making healthy fast meals for my family!

Recipe note: If you’re watching your caffeine intake or you don’t want your kids to be bouncing off the walls at bedtime, use decaf coffee in the rub and/or in place of the brewed coffee. You can also leave the coffee out altogether—it’ll still taste incredible

I’ve made this twice and I keep forgetting to double it for leftovers , both my kids ask for it the next day and my husband said he would love to have some for lunch! The rub could be frozen too for easy prep ahead time, i have not tried this yet but i know it would be ok! I need to remember to do this! If you don’t have an instant pot you could throw in your slow cooker for 4-6 hours , just follow the recipe as you would for instant pot! If you are following a gluten-free or paleo diet this fits right in!

I have listed the ingredients in this post in two parts so you can easily see the mocha rub list separate from the roast.see below


For the mocha rub:

  • 2 tablespoons finely ground coffee (you can substitute decaf)
  • 2 tablespoons smoked paprika
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon cocoa powder
  • 1 teaspoon Aleppo pepper (you can substitute red pepper flakes)
  • 1 teaspoon chili powder
  • 1 teaspoon ground ginger
  • 1 teaspoon sea salt

Instant Pot Crustless Pizza Casserole – 21 Day Fix Approved

Another delicious, simple , healthy crowd pleasing pizza casserole that’s good for you! My whole family enjoyed this one , I will be adding it to our monthly meals!

Just going to say this pizza recipe can be made in the instant pot or the crock pot. The choice is yours! I have done it both ways and prefer the instant pot! The pizza casserole is full of flavor, you can pretty much add any ingredients to your liking. Like with my My Other Instant Pot Casserole I added some turkey pepperoni since my kids love them. I think the next time I make this I may make it more like a supreme pizza, I love veggies! My kids are starting to think all we eat is pizza, hey at least its healthy!

To cook in a crock pot I browned the meat prior to placing in the crock pot. Once meat is in the crock pot , spread it out evenly. mix all seasonings with the tomato sauce then pour over the meat. Top with cheese and your choice of toppings. Cook on low heat for 4 hours then serve and enjoy! I hope you try this out and enjoy!


Another way to make this if you don’t have both ground turkey and sausage another great option is to use 2 pounds of ground meat. I have seen recipes that used that instead of half ground meat half sausage! Or you can make it strictly veggies! What I love about this is you truly can make it to your liking or family needs!!! 21 Day Fix Samoa Bars Gluten Free

its girl scout cookie time and  I always support the girls. One reason being I was a girl scout and a blue bird when I was younger and the other is I think it’s a great organization for girls. However come cookie time your waist line may not appreciate all the cookies! I will still purchase cookies but I also wanted to have something I could make year round with out the guilt! The ultimate cookie taster aka my husband LOVED these , he has been requesting them frequently , sorry buddy can’t make them weekly! Try them out I am sure you will love them!
