For the record I’ve never smoked crack or sniffed it or whatever else you can do with it ūüôą but all I can say this was AMAZING! Like aaaa-may-ZINGGG! It’s so simple to make and packed with flavor.I prep this for weekly lunches for myself and my husband it so yummy!

21 Day Fix Margarita Chicken

This recipe had me at margarita! Ha ha This is a perfect recipe for summer grilling or you can broil it in the oven as well! This recipe is super simple and perfect for my families busy long nights at the baseball field! Get festive with tequila,This marinade gives chicken a tangy citrus flavor with extra kick. (Most of the alcohol evaporates during cooking no silly side effects ha ha!.)

I will also like to add that I marinated this the day before we grilled it so when we got home my husband¬†could throw on the grill quickly! Try it out and let me know what you think! My entire family enjoyed it I paired it with some asparagus and roasted red potatoes ūüôā

its girl scout cookie time and ¬†I always support the girls. One reason being¬†I was a girl scout and a blue bird when I was younger and the other is I think it’s a great organization for girls. However come cookie time your waist line may not appreciate all the cookies! I will still purchase cookies but I also wanted to have something I could make year round with out the guilt! The ultimate cookie taster aka my husband LOVED these , he has been requesting them frequently , sorry buddy can’t make them weekly! Try them out I am sure you will love them!

Artichokes are one of my favorite veggies besides fresh home-grown beans! I grew up with my dad boiling them and we would pick each leaf off to eat. Anytime I can find a recipe to make that add artichokes I have to make! i ¬†think next time i might add noodles or serve over spaghetti squash. My husband and oldest loved this my youngest was in a mood of not wanting to eat anything but grapes ha ha! I’ll¬†for sure¬†try again with him!! Enjoy

I love oatmeal , ill eat it on a warm day even call me crazy but I just never get sick of it. I am also a fan of anything that I can prep ahead of time and had easy access too so these baked oatmeal cups had to be made! Super simple to make , a crowd pleaser and taste like a treat! You can add any fruit you choose i chose blueberries but next time I make them I am going to try bananas and strawberries. Try them out and let me know what you think!

21 Day Fix Cheesy Cauliflower Bake

Cauliflower is a staple in our house I use it to make fried rice, mashed potatoes , and several different casseroles. My boys love it they have no idea that I swap out rice for cauliflower and so on! Casseroles are made weekly I at home because with baseball , hockey ,and soccer having dinner prepped and ready to go is a must! The fact that it is healthy is a bonus!!!! Next time I make this I may add chicken , more protein! All the boys in my house devoured this up and it will be  on rotation now! Try this cheesy cauliflower bake out and let me know how you like it!

I love breakfast food and I love casseroles , a fellow coach gave me the idea to try ,¬†I am so happy that I did its delicious! My boys devoured it and my husband asked when I was making it again! I am going to take it as a two thumbs up from them! This is defiantly a dish I will make christmas morning! Its packed full of flavor , feels like a cheat but it’s not and the best part the leftovers freeze and reheat well! I split into 10 equal servings so If you’re following the 21 Day Fix you will count your serving as a yellow.

Healthy Pumpkin Oatmeal Chocolate Chip Cookies – 21 Day Fix Approved

Pumpkin Oatmeal Chocolate Chip Cookies – Gluten Free

First Off I need to say I didn’t think I had time to blog these cookies this week , until I realized my husband was on vacation! Yay for him lending a hand lol! I am a pumpkin girl everything from the smell to the taste is my favorite! My husband makes some awesome 21 day fix oatmeal chocolate chip cookies , i figured pumpkin could be done as well. These came out so yummy I had to remind myself I could only have one ha ha! Enjoy!!


What You Need РMakes 12 Large Cookies 

  • 1 tablespoon ground flaxseed meal
  • 2¬Ĺ tablespoons warm water
  • 2 cups oat flour (blend from 2¬ľ cups gf whole rolled oats)
  • 1 cup gluten-free whole rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¬Ĺ teaspoon sea salt
  • ¬ľ teaspoon nutmeg
  • ¬ĺ cup canned pumpkin puree
  • ¬ĺ cup cane sugar
  • ¬Ĺ cup melted warm coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips


Putting It Together –¬†

  1. Preheat the oven to 375¬į and line a large baking sheet with parchment paper.
  2. In a small bowl, combine the flaxseed and water. Stir and set aside to thicken.
  3. Make the oat flour: use a food processor or a blender to process 2¬ľ cups rolled oats into a fine flour and measure out 2 cups.
  4. In a large bowl, combine the oat flour, whole rolled oats, baking soda, cinnamon, salt and nutmeg.
  5. In a medium bowl, whisk together the pumpkin, sugar, coconut oil and vanilla. Add the thickened flaxseed mixture and stir to incorporate.
  6. Add the pumpkin mixture to the bowl of dry ingredients and stir to combine. Fold in the chocolate chips. Use a large cookie scoop to drop dollops of the cookie dough onto the baking sheet.
  7. Bake for 16 to 19 minutes or until the tops have browned (don’t under-bake). Let the cookies cool on the baking sheet for 5 minutes before cooling completely on a wire rack. When cookies are completely cool, they can be stored in an airtight container or frozen

Healthy Chicken & Dumplings – 21 Day Fix Approved

My memaw makes the absolute best chicken and dumplings and I am 100% certain there is no way to recreate in a healthier version. I am not going to lie I tried ha ha! However My husband came up with a recipe that works now of course it’s not memaw’s but its DELICIOUS!!!! Enjoy!


What You Need –

  • 3 boneless, skinless, chicken breasts
  • 16oz unsalted chicken broth
  • 32oz of water
  • 2 tsp pepper
  • 2 tsp sea salt
  • 2 tsp rosemary
  • 2-3 Bay leaves
  • 2 tbsp minced garlic
  • 2 handfuls of mushrooms
  • 1 medium-sized onion
  • 1 lb. frozen mixed veggies


For the dumplings –

  • 1-1/2 cup whole wheat flour
  • 2 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tbsp olive oil
  • 3/4 cup almond milk (non fat works well too)


Putting it all together –

  • In a large pot add chicken, broth , water and seasoning
  • Bring to a boil , over medium heat and cover the pot
  • Boil until chicken is completely cooked and is falling apart (about an hour or so)
  • Add veggies , reduce heat and cover the pot continue cooking for 45 min or so

For the dumplings –

  • In a large bowl whisk together flour, sea salt, and baking soda. Pour in the olive oil and cut into the flour mixture with a fork. Slowly add milk and stir with a large spoon until flour mixture is moist
  • Using a tablespoon, drop dumplings into the broth. Make sure the dumplings stay on top and don‚Äôt get mixed in with the chicken and veggies. Cook on medium for 30 min or until dumplings are thoroughly cooked in the center (Make sure broth is boiling slightly before adding dumplings)
  • Remove bay leaves and enjoy

Healthy Spinach & Ham Egg Cups 21 Day Fix Approved

Ingredients –

  • 1/2 cup red onions, diced
  • 2 garlic cloves, minced
  • 1/2 cup spinach, saut√©ed
  • 2 tablespoon 2% cottage cheese
  • 1 tablespoon nonfat Greek yogurt
  • 1/2 cup shredded cheese
  • Freshly ground black pepper, to taste
  • Olive oil or coconut oil cooking spray
  • 12 eggs
  • 12 ¬†thin slices of low-sodium deli ham
  • Chives, chopped for garnish


Directions –

Pre heat oven to 350 degrees

  • Spray muffin tin with cooking spray ( I use coconut oil cooking spray)
  • In a blender , blend the cottage cheese and yogurt , set aside
  • In a medium saucepan add the onions and the garlic ¬†over medium heat and cook until tender. Stir in the spinach and saut√© until slightly wilted
  • Remove from heat, stir in the blended cottage cheese mixture, the cheese, and season with freshly ground black pepper
  • Place 1 slice of ham in each muffin ¬†opening , form a cup with it
  • Spoon the spinach mixture into each ham cup evenly
  • Crack an egg over each cup then sprinkle ¬†ground black pepper
  • Bake for 15-20 minutes
  • serve and enjoy


**Bonus Tip** 

These Freeze very well! I prep a big batch at a time!
