21 Day Fix Lemon Bars

Its Easter weekend and I am in full baking mode! I made these last year sometime and decided that I needed to blog them and share the goodness of these Lemon bars. They are so yummy , its hard to stop at just 2! They are packed with flavor will leave your taste buds screaming for more!

Lemon bars will never be health food, but they will always be delicious—and if you’ve just gotta have a square of sweet-tart, chewy, lemony goodness, your best bet is to make them from scratch and shun the additives you’ll get with store-bought boxed mixes. This recipe is about as clean as lemon bars can get.

I will tell you that these are fairly soft in the middle. They do not set like a traditional lemon bar. But they do set enough to get them cut and plated, and boy are they delicious! The cashew crust gives them some chew and the lemon juice flavor comes through nice and tart. It’s a fantastic combination!

So typically my boys are not fans of lemon type desserts , they enjoy sucking juice out of lemons but that’s about it. This recipe won them over in a big way! Now I wont be making these often because it is so hard to stop at just 2 squares , I am thinking next time I make them I will cut them into smaller pieces that way I feel like I am getting to eat more! Ha ha its all mind over matter right! So I really hope you try these out and enjoy! Please let me know how they turn out!

Healthy Chicken Chow Mein – 21 Day Fix Approved

I love how versatile food can be. Seriously, real food can be so, so simple, but it can also be used for a never-ending variety of meals. I’ve recently discovered how versatile spaghetti squash can be. Brings me to Spaghetti Squash Chow Mein. I know your thinking are you kidding me Jamie? Trust me I struggled with the thought of this as well but decided to try it out anyways. This recipe makes a lot of food, which is always awesome because then you get to use the leftovers. And let me tell ya, the leftovers are almost better than the original recipe. Don’t you just love when food tastes better the second time around?!

 

So I added leftover chicken to mine however you can add any meat you choose or add in more veggies! I love that this meal can be so versatile and everyone will enjoy

Buffalo Cauliflower Bites – 21 Day Fix Approved

Baked buffalo cauliflower bites are a spicy , healthy , vegetarian , delicious alternative to chicken wings! Serve this easy appetizer with carrot sticks, celery and your favorite ranch or blue cheese dressing.Lets be real here I love me some boneless buffalo chicken wings however my waist says different ha ha! This recipe can be made with chicken instead of cauliflower , I have made it both ways I prefer cauliflower because I know my kiddos are getting another serving of veggies! Yep both kids ate these up and loved them! They have grown to love spicy! They both drink shakeology daily as well which I love but its a mom win when they are eating such nutritious veggies!!!

 

Seriously Addictive! I made these as an appetizer for the playoffs this year and they were so good! We couldn’t get enough of them and I loved that I was getting al the Buffalo flavor I wanted but I didn’t have to feel guilty about eating a lot of wings because I was eating veggies! Pros: Fast and a yummy way to get veggies! Cons: Not enough!

I have several others on the blog that are delicious these are our favorites! My tip is to look for the riced cauliflower I get mine at costco, but I have seen it at target, trader joes and whole foods!  Or you can rice it yourself I just prefer the pre riced makes life easier!

21 Day Fix Chicken Alfredo Bake

One of the biggest challenges I had when I was converting my husband to the clean eating lifestyle was Alfredo sauce….His favorite pasta dish is Fettucini  Alfredo , I knew whatever I made had to be dam close or he wouldn’t eat it! Early on I made it with cottage cheese and he actually loved it! So did my kiddos! I found a recipe floating around on the web of Alfredo with cauliflower, I was super excited to try it out! If you have been following me for a while now you know I love cauliflower anything!This amazing Alfredo sauce is creamy, rich, and full of flavor, yet it contains neither milk nor cream. How is that possible? Perfect for pasta, pizza, or anything else you might want to cover in white cauliflower creamy deliciousness.The Alfredo Sauce , I make it all the time. I use it in tons of recipes. I spoon-feed it to myself straight out of the blender ha ha I am serious!! So yummy!  I also Suggest using spaghetti squash instead of regular pasta noodles, it is delicious  both ways! I hope you try this recipe out and enjoy it , i know my family did!!

**NOTE** The cauliflower sauce will make 4 cups and you only use 2 or so of it so freeze the rest and save for next time! Or you can make two of these dishes and freeze one! I am a busy sports mom so prep ahead meals make life wonderful and easy!

Healthy Orange Chipotle Chicken – 21 Day Fix Approved

This Orange Chipotle chicken is by far one of my favorite clean eating recipes. It can be made in the instant pot or a skillet I have tried it both ways and they are equally as delicious! The chicken is great to have leftover with as well, and if you are a meal prep crazy like myself having left overs makes life ten times easier lol! Not only is this recipe delicious its very budget friendly..,. delicious and inexpensive I  know I am speaking love to some! This can easily be adapted to a freezer meal as well , the second time I cooked it I saved the left over sauce in a zip lock baggy for another meal! Totally suggest doing this

My boys loved it without any rice , Oliver enjoyed it in a wrap while Hunter could hardly wait for me to put on his plate ( he was grabbing pieces before) ha ha! My husband enjoyed as a burrito with fajita veggies, so multiple dinners can be made! I have a Cheesy Chipotle Chicken Rice that would taste amazing with this chicken as well! Just omit the chicken from the rice recipe and throw in the chipotle chicken and bam a new meal! The cheesy chipotle rice is one of my 8 year old’s favorite meals I make!

I have a couple of tips for making this – prepare all the ingredients before you start cooking this recipe moves fast! also if you want to cook in the instant pot follow the skillet instructions on saute setting , then cook on manual high pressure for five minutes.

Healthy Feta & Artichoke Chicken

This chicken breast with feta and artichoke is a life-saving weeknight dinner recipe. For those times when it seems like there aren’t enough hours in the day between work, kids sports, family, and maintaining a healthy lifestyle, this recipe simply requires whipping up a quick marinade the night before, than dinner is on the table the very next evening in under 20 minutes.This is defiantly a go to meal for my family that we all enjoy.

Chicken breast is so versatile, So much can be done with chicken however I try to find ways to spice it up so we don’t get bored with it.I tend to eat chicken more than any other meat. marinating it in tart yogurt, lemon juice, garlic, and spices not only steeps it in brilliant flavors, but it also tenderizes the chicken for a juicy and delicious main course. The marinade is technically enough to finish off this dish, there is an added  extra punch of fiber and nutrients with a savory compote of sun-dried tomatoes and artichokes. It’s topped with feta cheese to tie together all of the Mediterranean flavors.

All 3 boys in my house loved this and its usually a every other week meal. I like how quickly it can be made and how tasty it is! the marinade can easily be doubled and frozen for the next time or it can be thrown in the slow cooker! Lots of uses for it which is another reason I love it! I hope you try it out and enjoy it as much as my family did!!! Enjoy!

Who doesn’t love pizza? I mean honestly it’s not my favorite thing to eat but I do enjoy it on occasion. I made a lasagna with zoodles Click Here for the recipe that was super yummy and a huge hit in our house. The cauliflower rice i found at Costco I had to try making a similar dish to see if my family would eat it! The verdict is in and they all love it! Seriously so simple to make and the best part for everyone following the 21 Day Fix containers there are no yellows!!! So try it out let me know how you like it!!!!! Enjoy

 

Also you can really tweak the meat and veggies you add to this i chose sausage and turkey pepperoni because it’s what my kiddos love on pizza!

I love me some tacos , enchiladas , anything with meat cheese basically! Last week at Costco I scored cauliflower rice pre-made! I was so excited because let’s be real I have a busy schedule so finding pre-made meal prep items is huge! I wanted to try something new with cauliflower rice  that s when my genius husband said to do a mexican casserole! Seriously the guy  shows up with ideas when I need them! I also topped my serving with diced tomatoes. It was very simple to make , all 3 boys in my house loved it! It will be a bi weekly meal for now on! enjoy!

Healthy Cannolis – 21 Day Fix Approved

 There is something about a vanilla cannoli that just makes my mouth water, I have a hard time saying no to them. This recipe was tricky at first I wont lie thankfully Craig my kitchen wizard husband came to the rescue otherwise the cannoli shells and I were going to have a show down! ha ha! I counted 2 cannoli’s as 1 yellow treat swap for those following the 21 Day Fix  They are not huge , but just the right size to satisfy your craving! I suggest making the filling/cream first and let it sit in the fridge while you make the shells. I also did not fill them until I was ready to eat them. I hope you enjoy!
For Cannoli Cream Filling 
  • Ricotta Cheese
  • Greek Yogurt
  • Honey (optional)
  • Vanilla Extract
  • Stevia (liquid or powder)
INSTRUCTIONS
  • For multiple servings: Mix 2 Cups Ricotta, ½ Cup Yogurt, 2 Tbsp honey, 2-3 tsp vanilla and stevia to taste Stir together and set aside in refrigerator
  • Refrigerate leftovers for up to 5 days.
  • For single serving: Mix ⅔ Cup Ricotta, 1 Tbsp Yogurt, 1 tsp honey (optional), ½ tsp vanilla, and stevia to taste. Stir together and set aside in refrigerator

For Cannoli Shell 

  • 1/2 cup of whole wheat flour ( or flour of your choice )
  • 3/4 cup of almond milk
  • 1/4 teaspoon pure vanilla extract
  • 1 small egg white 
  • a dash of pure Stevia extract
  • 6 tall shot glasses

 

Instructions For Shells 

  • Preheat over to 425 degrees
  • Spray 6 tall shot glasses
  • Combine all ingredients in a food processor/blender.
  • Blend on high for about a minute. Let the batter settle for a couple of minutes, this will help the bubbles in the batter dissipate
  • Heat a medium-sized saucepan over medium heat
  • Spray a cooking spray, of your choice, covering the bottom of the pan. I prefer to use spray coconut oil but any spray oil will do. Wipe the oil around the pan to ensure even coverage
  • Pour about 3 tablespoons worth of batter into the center of the saucepan. Swirl the saucepan around so that the batter forms a circle in the bottom of pan
  • This  technique  is hard to get right on your first try. However, once you get the technique right, it is just like riding a bike and you will be able to do it perfectly every time. Let the spread out batter cook for a couple of minutes. You will see the batter turn from a shiny liquid to a more matte finished crepe. Check the underside of the crepe and once it appears lightly brown (about 2 to 3 minutes) you can remove the crepe from the pan using a wide spatula.
  • Allow crepe to cool for just a second and then wrap the dough around the oiled shot glasses.  Press firmly on the seal to create a good fit
  •  Place the wrapped shot glasses on baking sheet lined with parchment paper.  Spray the outsides of the cannoli dough with oil
  • Place the cannolis in the oven, bake for about 12 minutes ( until slightly golden brown) Continuously check on the cannolis to ensure they do not get too brown
  • After the cannolis have baked, remove them from the oven and allow to cool slightly.  Using oven mitts (shot glasses or roll will be hot), carefully slide the baked cannoli off of the shot glasses  Allow the cannoli shell to cool completely, on a cooling rack, before filling
  • To fill the cannoli you can either use a pastry bag or plastic bag with one of the corners cut off.   It is best that you fill the cannolis right before you serve them 
  • This will ensure that the filling does not have a chance to sit in the shell for too long causing the shell to get mushy
  •  Once you are ready to fill the cannolis, remove the cannoli filling from the refrigerator.  Place the filling in a pastry bag or plastic bag
  • Fill the cannolis starting from one side and then the other so that the cannoli has filling throughout the entire shell
  • Enjoy!
