Instant Pot Corned Beef & Cabbage – 21 Day Fix Approved

March 17, 2017
1 Review (2.00 out of 5)
Serves 4-6

Celebrate St. Patrick’s Day – or the luck of the Irish every day!! I have been meaning to blog this recipe for a while but had to first attempt in the famous instant pot! You choose whether you want to make traditional corned beef and cabbage low and slow in the slow cooker or fast in the instant pot!! I have tried both methods now and both are fantastic!!!! Try it out and let me know what you think!

some notes about the recipe –

I used Wellshire Farms First Cut Brisket, which has no nitrates, which is why my corned beef isn’t pink in color.

I didn’t add a lot of salt it the corned beef has a lot in it already

For the crock pot –

Place corned beef in the bottom of the slow cooker. Place the potatoes, carrots, and parsnips around the corned beef, then add enough water to cover the corned beef. Cook on low 8-10 hours or until tender. Add the cabbage wedges during the last 20 minutes of cooking time to avoid overcooking.

Healthy Chicken Chow Mein – 21 Day Fix Approved

March 15, 2017
Serves 4-6

I love how versatile food can be. Seriously, real food can be so, so simple, but it can also be used for a never-ending variety of meals. I’ve recently discovered how versatile spaghetti squash can be. Brings me to Spaghetti Squash Chow Mein. I know your thinking are you kidding me Jamie? Trust me I struggled with the thought of this as well but decided to try it out anyways. This recipe makes a lot of food, which is always awesome because then you get to use the leftovers. And let me tell ya, the leftovers are almost better than the original recipe. Don’t you just love when food tastes better the second time around?!

So I added leftover chicken to mine however you can add any meat you choose or add in more veggies! I love that this meal can be so versatile and everyone will enjoy

21 Day Fix Cauliflower Cheeseburger Casserole

Move over hamburger helper there is a new casserole in town!

Cauliflower is the new potato to me , it is very versatile and I am still amazed with how many different meal options you have with it. There is a great deal of health benefits to eating it as well! My oldest son now eats it raw ha ha , he still hates the smell of it when it’s cooked but its his favorite veggie! This cheeseburger casserole is sure to be a hit ,it resembles hamburger helper just with out all the added gunk! you can rice the cauliflower or leave them in florets for the dish. Either works fine! Two thumbs up from my family on this one! Try it out and let me know what you think!

Also I sprinkled some bacon crumbles on top the recipe does not call for this i just had extra from day prior

I am sharing the benefits of eating cauliflower so you will know what a great food you’re putting into your system!

Better Digestion
Cauliflower is a great source of dietary fiber, which is essential for optimal digestion. When you get enough fiber in your diet, it helps to keep things moving smoothly through the intestines. Cauliflower also contains a compound called glucoraphin, which protects your stomach and intestines from certain health conditions such as cancer and ulcers.

Antioxidants
Cauliflower contains a high amount of antioxidants, which are essential for the body’s overall health and help to prevent heart disease, cancer, and stroke. Antioxidants are also essential in destroying free radicals that accelerate the signs of aging.

Anti-Inflammatory
Because of the omega-3 fatty acids and vitamin K in cauliflower, it helps to prevent chronic inflammation that leads to conditions such as arthritis, chronic pain, and certain bowel conditions.

Pregnancy
Cauliflower provides a good amount of folate (B9), a B vitamin that is necessary for a healthy pregnancy. Folate deficiency in pregnant women can lead to problems such as birth defects and low birth weight.

B Vitamins
In addition to folate, cauliflower is also loaded with other important B vitamins like niacin, riboflavin, pantothenic acid, and thiamine.

Heart Health
Cauliflower protects from heart disease in many ways. It contains allicin, which has been found to reduce the occurrence of stroke and heart disease. Additionally, cauliflower can help to lower cholesterol levels in the body.

Weight Loss
Cauliflower is a great food to include in your diet if you’re dieting because it’s low in calories and can be used in a variety of ways. Try ricing the cauliflower into a “rice” and using it in stir-fries instead of regular rice. You can also boil cauliflower and mash it into a healthier version of mashed potatoes.

21 Day Fix Chicken Alfredo Bake

February 26, 2017
Serves 6

One of the biggest challenges I had when I was converting my husband to the clean eating lifestyle was Alfredo sauce….His favorite pasta dish is Fettucini  Alfredo , I knew whatever I made had to be dam close or he wouldn’t eat it! Early on I made it with cottage cheese and he actually loved it! So did my kiddos! I found a recipe floating around on the web of Alfredo with cauliflower, I was super excited to try it out! If you have been following me for a while now you know I love cauliflower anything! This amazing Alfredo sauce is creamy, rich, and full of flavor, yet it contains neither milk nor cream. How is that possible? Perfect for pasta, pizza, or anything else you might want to cover in white cauliflower creamy deliciousness. The Alfredo Sauce , I make it all the time. I use it in tons of recipes. I spoon-feed it to myself straight out of the blender ha ha I am serious!! So yummy!  I also Suggest using spaghetti squash instead of regular pasta noodles, it is delicious  both ways! I hope you try this recipe out and enjoy it , i know my family did!!

**NOTE** The cauliflower sauce will make 4 cups and you only use 2 or so of it so freeze the rest and save for next time! Or you can make two of these dishes and freeze one! I am a busy sports mom so prep ahead meals make life wonderful and easy!

If you are following the 21 Day Fix, this recipe makes a total of six servings and is counted as: 1 yellow, 1 green, .5 red and 1 blue.

Healthy Orange Chipotle Chicken – 21 Day Fix Approved

February 21, 2017
Serves 4

This Orange Chipotle chicken is by far one of my favorite clean eating recipes. It can be made in the instant pot or a skillet I have tried it both ways and they are equally as delicious! The chicken is great to have leftover with as well, and if you are a meal prep crazy like myself having left overs makes life ten times easier lol! Not only is this recipe delicious its very budget friendly..,. delicious and inexpensive I  know I am speaking love to some! This can easily be adapted to a freezer meal as well , the second time I cooked it I saved the left over sauce in a zip lock baggy for another meal! Totally suggest doing this

My boys loved it without any rice , Oliver enjoyed it in a wrap while Hunter could hardly wait for me to put on his plate ( he was grabbing pieces before) ha ha! My husband enjoyed as a burrito with fajita veggies, so multiple dinners can be made! I have a Cheesy Chipotle Chicken Rice that would taste amazing with this chicken as well! Just omit the chicken from the rice recipe and throw in the chipotle chicken and bam a new meal! The cheesy chipotle rice is one of my 8 year old’s favorite meals I make!

I have a couple of tips for making this – prepare all the ingredients before you start cooking this recipe moves fast! also if you want to cook in the instant pot follow the skillet instructions on saute setting , then cook on manual high pressure for five minutes.

Healthy Pad Thai – 21 Day Fix Approved

February 19, 2017
Serves 8

Let’s just say this Spaghetti Squash Pad Thai is a must-try! It’s a low carb, clean up version of the original and was a huge hit at home!  Who needs unhealthy take-out? This dish is delicious and guilt-free! I also love how easy it is to customize with your choice of protein. It’s sure to be a crow pleaser, even for the picky eaters :)The flavors are similar to the traditional dish you can get at any night market or noodle stall in Thailand; there’s tamarind paste, eggs, bean sprouts, peanuts, and lots of garnishes

One cup of cooked spaghetti squash only has 42 calories, compared to a cup of cooked pasta with over 200 calories. It only has 10 grams of total carbs, which is 1/4 the amount you get from pasta. You’ll also get 9% of the recommended daily intake of dietary fiber, also delivering a range of nutrients, including vitamins C and A, Potassium & Calcium. Spaghetti squash contains a fair amount of fiber,  Fiber also helps with weight reduction as it makes you feel fuller longer.

The fact that spaghetti squash has a lot of potassium makes it the ideal diet for people with blood pressure. It can amazingly lower high blood pressure if consumed over time. The folate contained in the spaghetti squash helps in strengthening the walls of blood vessels besides enhancing blood circulation. Potassium is a mineral that maintains proper muscle and nerve function, and it is also found in spaghetti squash, making it helpful for people with high blood pressure. My family enjoys spaghetti squash over regular noodles and if you have an instant pot preparing it is easier than ever! I hope you give this recipe a try and let me know how you like it!

Spaghetti Squash Meatball Cups – 21 Day Fix Approved

February 16, 2017
Serves 4-6

These bite-sized meatball cupcakes made from spaghetti squash are a tasty alternative to traditional spaghetti and meatballs. As much as I love a big plate of pasta (carbs are my spirit food) I also try to eat them in moderation ha ha! Some people love chocolate I love pasta and bread! Spaghetti squash is a tasty, healthy alternative. As a pasta lover to the core, I found I enjoyed these even more with the squash than I would have with traditional noodles. The squash provides a natural sweetness and tenderness that tastes delicious with the hearty meatball and tomato sauce. My boys thought these were fun to eat like a “cupcake” , they both love meatballs so I knew it would be a hit! The husband enjoyed them as well however I think he would prefer a big plate of spaghetti squash and meatballs lol!

Instant Pot Mocha Rubbed Roast – 21 Day Fix Approved

February 10, 2017
Serves 4
Prep time
15m
Cook Time
35m

I love a good roast recipe , normally I would use my crock pot to make it. However i had to try it in the instant pot , I tell you what I have never tasted a more delicious roast in my life. The fact that it took less than an hour is amazing! I came home from baseball practice through it all together and bam dinner on the table and 3 happy boys! I cannot say enough good things about the instant pot , its been a complete game changer for meal prepping and making healthy fast meals for my family!

Recipe note: If you’re watching your caffeine intake or you don’t want your kids to be bouncing off the walls at bedtime, use decaf coffee in the rub and/or in place of the brewed coffee. You can also leave the coffee out altogether—it’ll still taste incredible

I’ve made this twice and I keep forgetting to double it for leftovers , both my kids ask for it the next day and my husband said he would love to have some for lunch! The rub could be frozen too for easy prep ahead time, i have not tried this yet but i know it would be ok! I need to remember to do this! If you don’t have an instant pot you could throw in your slow cooker for 4-6 hours , just follow the recipe as you would for instant pot! If you are following a gluten-free or paleo diet this fits right in!

I have listed the ingredients in this post in two parts so you can easily see the mocha rub list separate from the roast.see below

For the mocha rub:

  • 2 tablespoons finely ground coffee (you can substitute decaf)
  • 2 tablespoons smoked paprika
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon cocoa powder
  • 1 teaspoon Aleppo pepper (you can substitute red pepper flakes)
  • 1 teaspoon chili powder
  • 1 teaspoon ground ginger
  • 1 teaspoon sea salt

Healthy Broccoli Tots – 21 Day Fix Approved

February 7, 2017
Serves 28 Tots

Where are all my tater tot lovers at? This time they’re chock full of broccoli. Getting your greens in has never been so fun! Green Giant makes some pre made ones which I do keep on hand for those busy nights but I honestly prefer to make my own. The pre made ones have a lot of ingredients in them I try hard to stay away from, but when your busy game on! ha ha These also can be gluten free by subbing regular bread crumbs for gluten free bread crumbs. My Boys didn’t like the smell in the kitchen of cooked broccoli but they ate them up , my 8 year old prefers these over the regular potato tater tot now! Mom win!!!!

To make these Broccoli Tots, you’ll start by steaming broccoli florets over the stove.

Once tender, the broccoli gets chopped into small pieces — and then combined with egg whites, breadcrumbs, seasonings, and cheese. You can even add a bit of hot sauce for some extra heat. It helps to refrigerate the mixture briefly (15–30 minutes) to help it firm up and make the shaping process easier.

To form your tots, use your hands to shape the mixture into a tot-like form. Then, place them on a baking sheet and bake until golden brown. The oven is a great way to avoid all the unnecessary oil from the deep fryer. Everyone will get excited about these Broccoli Tots. They make a great snack, side dish, or even a fun appetizer to serve to guests. It’s a fun, bite-sized treat for kids and adults give them a try — you will not be dissapointed
