Low Carb BBQ Chicken Cheese & Bacon Casserole

Low carb is the latest craze lately and honestly I can’t say I’ve jumped on the bandwagon ha ha! I love my carbs too much to give them up completely. I have been more “Carb Cycling” then anything and that i what seems to work best for me!

What is carb cycling?is a low carbohydrate diet with intermittent periods of high or moderate carbohydrate consumption; essentially you are cycling your carbs to achieve a desired result. Most people have the misconception that consuming low carbs on a day-to-day basis for long periods of time is good for them.

Now I still follow a clean eating lifestyle I just make modifications here and there and my results still happen! That brings us to this casserole, which is by far one of the most delicious dishes I have made! The flavor is on point, its easy enough to prepare ahead of time to make a quick mid-week dinner. I have even doubled the batch and freeze one. It tastes as good as it does the day its made. My husband enjoyed this as well as my two boys! It’s now in rotation for our monthly dinners!  Try it out and let me know how you like it!

 

A quick tip if you have an instant pot, use it to prep your chicken or you can use the slow cooker. I prefer my instant pot because it shaves time off prepping and gets me back to enjoying my family! Depending on thawed or frozen chicken throw your chicken in pot with all the seasoning on high pressure for about 22-28 minutes and you will be set to go!

Skinny Beef Stroganoff

First I want to say thank you all for your continued support and trying my recipes! I know I have been slacking on posting new ones but I promise to be more active! We are in baseball mode fully Oliver plays for two teams one being a travel 🙂  and Hunter plays as well! It’s just an extremely busy time of year but I am going to make a point to catch up on my recipe blogging! okay enough about my boring life let’s get to the real reason your reading this post!!!

Hearty and satisfying, Skinny Beef Stroganoff takes just 20 minutes to make and won’t add inches to your waistline.  This lightened up version uses no butter or sour cream and  is just as tasty as it’s full fat version. I loved this recipe because of how quickly it can be made but it is very delicious as well! Both boys enjoyed it and it actually has become a every two-week routine to make it, sometime si make extra to take to the baseball fields lol! Yep it tastes good cold!

For the record I’ve never smoked crack or sniffed it or whatever else you can do with it 🙈 but all I can say this was AMAZING! Like aaaa-may-ZINGGG! It’s so simple to make and packed with flavor.I prep this for weekly lunches for myself and my husband it so yummy!

Savory Chicken Meatballs & Coconut Curry Sauce

My husband made these delicious chicken meatballs with coconut curry sauce for dinner and they are amazing! Cheap , easy 21 Day Fix friendly , and the entire family gobbled them up! BONUS we had left overs that heated up well the next day for lunch , now that is a win win in my book! You can even freeze these and the sauce and throw in your crock pot or instant pot next time! 21 Day Fix Margarita Chicken

This recipe had me at margarita! Ha ha This is a perfect recipe for summer grilling or you can broil it in the oven as well! This recipe is super simple and perfect for my families busy long nights at the baseball field! Get festive with tequila,This marinade gives chicken a tangy citrus flavor with extra kick. (Most of the alcohol evaporates during cooking no silly side effects ha ha!.)

I will also like to add that I marinated this the day before we grilled it so when we got home my husband could throw on the grill quickly! Try it out and let me know what you think! My entire family enjoyed it I paired it with some asparagus and roasted red potatoes 🙂

Peanut Butter Chocolate Chip Cookies – 21 Day Fix Approved

21 Day Fix Breakfast Pie

I am a huge lover of Quiche , its been a favorite since I worked at Marie Callender in high school! I however try to stay away since a flaky buttery crust is not always the best for me or my belly! lol Insert breakfast pie! It’s similar to the Quiche just no crust! I was not sure how I would like it being there was no crust but turns out I love it just fine! This particular recipe  is so simple to prepare and will make two pie tins which is awesome for all you meal prepper’s one can be frozen ( be sure to slice it first) and then reheated when you want it! A great healthy grab and go breakfast!

21 Day Fix Lemon Bars

Its Easter weekend and I am in full baking mode! I made these last year sometime and decided that I needed to blog them and share the goodness of these Lemon bars. They are so yummy , its hard to stop at just 2! They are packed with flavor will leave your taste buds screaming for more!

Lemon bars will never be health food, but they will always be delicious—and if you’ve just gotta have a square of sweet-tart, chewy, lemony goodness, your best bet is to make them from scratch and shun the additives you’ll get with store-bought boxed mixes. This recipe is about as clean as lemon bars can get.

I will tell you that these are fairly soft in the middle. They do not set like a traditional lemon bar. But they do set enough to get them cut and plated, and boy are they delicious! The cashew crust gives them some chew and the lemon juice flavor comes through nice and tart. It’s a fantastic combination!

So typically my boys are not fans of lemon type desserts , they enjoy sucking juice out of lemons but that’s about it. This recipe won them over in a big way! Now I wont be making these often because it is so hard to stop at just 2 squares , I am thinking next time I make them I will cut them into smaller pieces that way I feel like I am getting to eat more! Ha ha its all mind over matter right! So I really hope you try these out and enjoy! Please let me know how they turn out!

French Onion Chicken – 21 Day Fix Approved

French onion soup is a type of soup usually based on meat stock and onions, and often served gratinéed with croutons and cheese on top or a large piece of bread.It has always been one of my absolute favorite soups but it’s not exactly the healthiest. insert let’s make a healthy version and add a twist…French Onion chicken in the skillet! I am sure this could be made in the slow cooker or instant pot as well!

Now to make it gluten-free just use a gluten-free flour or you can omit the flour. I only used it to thicken it up , if you do omit the flour it will be a little more runny but still delicious! I was certain my boys would not want to eat this because of the onions but they proved me wrong! Both boys devoured it and my husband has asked for it to be made weekly lol! I guess this is a winner! try it out and let me know what you think!

Brushetta Chicken Salad – 21 Day Fix Approved

Chicken Bruschetta salad super simple and delicious! This I made for myself one day for lunch while kids were at school. It is super yummy , I used left over chicken from the night before and just threw together. I have a chicken bruschetta pasta recipe (Click Here) if you want to make a meal for the family! Also I did  add feta to mine but not enough to count a container if you are following the container system!
