21 Day Fix Breakfast Pie

I am a huge lover of Quiche , its been a favorite since I worked at Marie Callender in high school! I however try to stay away since a flaky buttery crust is not always the best for me or my belly! lol Insert breakfast pie! It’s similar to the Quiche just no crust! I was not sure how I would like it being there was no crust but turns out I love it just fine! This particular recipe  is so simple to prepare and will make two pie tins which is awesome for all you meal prepper’s one can be frozen ( be sure to slice it first) and then reheated when you want it! A great healthy grab and go breakfast!

21 Day Fix Lemon Bars

Its Easter weekend and I am in full baking mode! I made these last year sometime and decided that I needed to blog them and share the goodness of these Lemon bars. They are so yummy , its hard to stop at just 2! They are packed with flavor will leave your taste buds screaming for more!

Lemon bars will never be health food, but they will always be delicious—and if you’ve just gotta have a square of sweet-tart, chewy, lemony goodness, your best bet is to make them from scratch and shun the additives you’ll get with store-bought boxed mixes. This recipe is about as clean as lemon bars can get.

I will tell you that these are fairly soft in the middle. They do not set like a traditional lemon bar. But they do set enough to get them cut and plated, and boy are they delicious! The cashew crust gives them some chew and the lemon juice flavor comes through nice and tart. It’s a fantastic combination!

So typically my boys are not fans of lemon type desserts , they enjoy sucking juice out of lemons but that’s about it. This recipe won them over in a big way! Now I wont be making these often because it is so hard to stop at just 2 squares , I am thinking next time I make them I will cut them into smaller pieces that way I feel like I am getting to eat more! Ha ha its all mind over matter right! So I really hope you try these out and enjoy! Please let me know how they turn out!

French Onion Chicken – 21 Day Fix Approved

French onion soup is a type of soup usually based on meat stock and onions, and often served gratinéed with croutons and cheese on top or a large piece of bread.It has always been one of my absolute favorite soups but it’s not exactly the healthiest. insert let’s make a healthy version and add a twist…French Onion chicken in the skillet! I am sure this could be made in the slow cooker or instant pot as well!

Now to make it gluten-free just use a gluten-free flour or you can omit the flour. I only used it to thicken it up , if you do omit the flour it will be a little more runny but still delicious! I was certain my boys would not want to eat this because of the onions but they proved me wrong! Both boys devoured it and my husband has asked for it to be made weekly lol! I guess this is a winner! try it out and let me know what you think!

Brushetta Chicken Salad – 21 Day Fix Approved

Chicken Bruschetta salad super simple and delicious! This I made for myself one day for lunch while kids were at school. It is super yummy , I used left over chicken from the night before and just threw together. I have a chicken bruschetta pasta recipe (Click Here) if you want to make a meal for the family! Also I did  add feta to mine but not enough to count a container if you are following the container system!

Healthy Pizza Pockets – 21 Day Fix Approved

Pizza Pockets

So I will get straight to the point the frozen pre made hot pockets are a chemical shit storm of ingredients and personally I am not into putting poison into my families body! However I am not going to sit here and pretend I have never eaten them because I have , and so have my boys. I started reading labels and learning what ingredients were when I started eating clean almost 3 years ago. The stuff they put in those frozen meals are just flat-out horrible for you , but in the fast paced world of go go go we sometimes go for the easy grab and go.I am happy to say its been 3 plus years since hot pockets have graced my freezer lol! I knew i had to try making my own version that I could make in bulk and freeze! Travel baseball is in full swing , having healthy options that are a quick grab and go are a must!

I pride myself on what I feed my family and I kick it up a notch during baseball , soccer and hockey because I want my little athletes feeling their best when they hit the field or ice! sometimes it might not be obvious how much the wrong food can impact performance, but I promise you that loads of sugar, food dye and processed foods that sit heavy, digest poorly and have zero nutritional value will slow your child down, sap their energy after the first 30 minute spike and set them up for a crash, possibly at the worst time (with the game on the line).

So back to the hot pockets they are delicious , easy and freeze! My boys loved them and today I am actually making 2 dozen to freeze and have on hand for the busy months ahead! If you are looking for more of my baseball/sports food plan Click Here to read what we do on tournament day!

Instant Pot Corned Beef & Cabbage – 21 Day Fix Approved

Celebrate St. Patrick’s Day – or the luck of the Irish every day!! I have been meaning to blog this recipe for a while but had to first attempt in the famous instant pot! You choose whether you want to make traditional corned beef and cabbage low and slow in the slow cooker or fast in the instant pot!! I have tried both methods now and both are fantastic!!!! Try it out and let me know what you think!

some notes about the recipe – 

I used Wellshire Farms First Cut Brisket, which has no nitrates, which is why my corned beef isn’t pink in color.

I didn’t add a lot of salt it the corned beef has a lot in it already

For the crock pot – 

Place corned beef in the bottom of the slow cooker. Place the potatoes, carrots, and parsnips around the corned beef, then add enough water to cover the corned beef. Cook on low 8-10 hours or until tender. Add the cabbage wedges during the last 20 minutes of cooking time to avoid overcooking.

Healthy Chicken Chow Mein – 21 Day Fix Approved

I love how versatile food can be. Seriously, real food can be so, so simple, but it can also be used for a never-ending variety of meals. I’ve recently discovered how versatile spaghetti squash can be. Brings me to Spaghetti Squash Chow Mein. I know your thinking are you kidding me Jamie? Trust me I struggled with the thought of this as well but decided to try it out anyways. This recipe makes a lot of food, which is always awesome because then you get to use the leftovers. And let me tell ya, the leftovers are almost better than the original recipe. Don’t you just love when food tastes better the second time around?!

 

So I added leftover chicken to mine however you can add any meat you choose or add in more veggies! I love that this meal can be so versatile and everyone will enjoy

Buffalo Cauliflower Bites – 21 Day Fix Approved

Baked buffalo cauliflower bites are a spicy , healthy , vegetarian , delicious alternative to chicken wings! Serve this easy appetizer with carrot sticks, celery and your favorite ranch or blue cheese dressing.Lets be real here I love me some boneless buffalo chicken wings however my waist says different ha ha! This recipe can be made with chicken instead of cauliflower , I have made it both ways I prefer cauliflower because I know my kiddos are getting another serving of veggies! Yep both kids ate these up and loved them! They have grown to love spicy! They both drink shakeology daily as well which I love but its a mom win when they are eating such nutritious veggies!!!

 

Seriously Addictive! I made these as an appetizer for the playoffs this year and they were so good! We couldn’t get enough of them and I loved that I was getting al the Buffalo flavor I wanted but I didn’t have to feel guilty about eating a lot of wings because I was eating veggies! Pros: Fast and a yummy way to get veggies! Cons: Not enough!

I have several others on the blog that are delicious these are our favorites! My tip is to look for the riced cauliflower I get mine at costco, but I have seen it at target, trader joes and whole foods!  Or you can rice it yourself I just prefer the pre riced makes life easier!

Move over hamburger helper there is a new casserole in town!

Cauliflower is the new potato to me , it is very versatile and I am still amazed with how many different meal options you have with it. There is a great deal of health benefits to eating it as well! My oldest son now eats it raw ha ha , he still hates the smell of it when it’s cooked but its his favorite veggie! This cheeseburger casserole is sure to be a hit ,it resembles hamburger helper just with out all the added gunk! you can rice the cauliflower or leave them in florets for the dish. Either works fine! Two thumbs up from my family on this one! Try it out and let me know what you think!

Also I sprinkled some bacon crumbles on top the recipe does not call for this i just had extra from day prior 

I am sharing the benefits of eating cauliflower so you will know what a great food you’re putting into your system!

Better Digestion
Cauliflower is a great source of dietary fiber, which is essential for optimal digestion. When you get enough fiber in your diet, it helps to keep things moving smoothly through the intestines. Cauliflower also contains a compound called glucoraphin, which protects your stomach and intestines from certain health conditions such as cancer and ulcers.

Antioxidants
Cauliflower contains a high amount of antioxidants, which are essential for the body’s overall health and help to prevent heart disease, cancer, and stroke. Antioxidants are also essential in destroying free radicals that accelerate the signs of aging.

Anti-Inflammatory
Because of the omega-3 fatty acids and vitamin K in cauliflower, it helps to prevent chronic inflammation that leads to conditions such as arthritis, chronic pain, and certain bowel conditions.

Pregnancy
Cauliflower provides a good amount of folate (B9), a B vitamin that is necessary for a healthy pregnancy. Folate deficiency in pregnant women can lead to problems such as birth defects and low birth weight.

B Vitamins
In addition to folate, cauliflower is also loaded with other important B vitamins like niacin, riboflavin, pantothenic acid, and thiamine.

Heart Health
Cauliflower protects from heart disease in many ways. It contains allicin, which has been found to reduce the occurrence of stroke and heart disease. Additionally, cauliflower can help to lower cholesterol levels in the body.

Weight Loss
Cauliflower is a great food to include in your diet if you’re dieting because it’s low in calories and can be used in a variety of ways. Try ricing the cauliflower into a “rice” and using it in stir-fries instead of regular rice. You can also boil cauliflower and mash it into a healthier version of mashed potatoes.

21 Day Fix Chicken Alfredo Bake

One of the biggest challenges I had when I was converting my husband to the clean eating lifestyle was Alfredo sauce….His favorite pasta dish is Fettucini  Alfredo , I knew whatever I made had to be dam close or he wouldn’t eat it! Early on I made it with cottage cheese and he actually loved it! So did my kiddos! I found a recipe floating around on the web of Alfredo with cauliflower, I was super excited to try it out! If you have been following me for a while now you know I love cauliflower anything!This amazing Alfredo sauce is creamy, rich, and full of flavor, yet it contains neither milk nor cream. How is that possible? Perfect for pasta, pizza, or anything else you might want to cover in white cauliflower creamy deliciousness.The Alfredo Sauce , I make it all the time. I use it in tons of recipes. I spoon-feed it to myself straight out of the blender ha ha I am serious!! So yummy!  I also Suggest using spaghetti squash instead of regular pasta noodles, it is delicious  both ways! I hope you try this recipe out and enjoy it , i know my family did!!

**NOTE** The cauliflower sauce will make 4 cups and you only use 2 or so of it so freeze the rest and save for next time! Or you can make two of these dishes and freeze one! I am a busy sports mom so prep ahead meals make life wonderful and easy!
