21 Day Fix Banana Bread Muffins

Ingredients

  • 3
    Bananas (ripe)
  • 2
    Eggs
  • 3/4 Cups
    Quick Oats
  • 2 Scoops
    Vanilla Or Chocolate Shakeology
  • 2 Tablespoons
    Honey
  • 1 Teaspoon
    Baking Powder
  • 1 Teaspoon
    Baking Soda
  • 1/2 Teaspoon
    Cinnamon

Instructions

  1. Preheat oven to 350 degrees , line with silicone or foil liners, or you can use coconut oil to grease the muffin tin

  2. Place all of the ingredients in a blender, (or food processor), and blend until mixture is smooth.

  3. Divide mixture evenly between 12 muffin tins.

  4. Bake for 18-22 minutes, or until toothpick comes out clean.

    Note: Be sure to use either silicone or foil liners with the paper insert removed because they will stick, and they will appear to be “sunk” in as does any muffin made with oats rather than flour!)

    these are my fave and my 11 year old loves them too….I sprinkle a few Enjoy Life mini choco chips on some of his for a treat! They freeze perfectly well and are an awesome mid morning snack for me! Thank you!!!

    These were fantastic. I used steal cut quick oats instead and 2 packets of stevia instead of honey since I was out, with the chocolate shakeology. These were even approved by my boyfriend and super easy to make.

    I just made them with 2 scoops, but if I could get by with one, I might prefer that. Are you using scoops from the 30 day bag or the sample size bag??

    Love Love Love these muffins!!! They are so easy and so delicious! My twin toddlers gobble them up… It is a muffin I can feel good about giving them! I like them using chocolate shakeology (or other chocolate whey powder – VegaOne Nutritional Shake works well). However, I just got vanilla shakeology in the mail and will be making them in that variety tomorrow!

    using a mini muffin tin….24 mini muffins…. so 2 is a serving. any idea on cook time?

    These tasted pretty good considering their limited ingredients. The only problem is due to lack of oil (or butter) they completely stuck to the muffin tin liners. Next time I would definitely spray the liners or just add 1-2 T oil or coconut oil to recipe. A bit of oil is not going to kill anyone.

    I made these with the following subs:
    2 scoops vanilla whey, 12 oz banana, 4 egg whites & 2 tbsp of sf surup. They were AMAZING. Macros are 73 cals 1f/11c/7p.

    I made these but as a mini loaf, they were great!!! But as I am seeing the nutrition value, it is surprising the carb count being so high. Any recommendations to sub to lower it??
