21 Day Fix Un-Stuffed Cabbage Rolls

Clearly I have been missing out in the Cabbage department, because OMG this was this most delicious meal I have made ever! Not even my 21 Day Fix Enchiladas can compare. I know when you hear cabbage you cringe , its ok I did to. I want you to keep your mind open and just try this recipe I promise you will be happy you did! My 7 year old ate this without any complaints, he said I tried something new and it was good! This meal will be a every other week dinner!  Also It is very quick and easy to prepare! Enjoy!!!!:)

 

Ingredients – Serves 6-8

1 1/2 to 2 pounds ground turkey
1 tablespoon oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes  (low sodium or no salt added)
1 can (8 ounces) tomato sauce (no sodium or no salt added)
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Instructions –

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.
Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

    I found this recipe on someone else’s page and tried it. It was awesome! I would recommend using more diced tomatoes and a large can of tomatoe sauce. The one thing that made all the difference was to sauté and season the cabbage before adding it to the mixture. It was do good that a friend and my patents have made it and loved it!

    I made this for the first time when my in laws were at our house. Nerve racking! But it turned it well and everyone liked it (even my father in law who is a picky eater). I had non fat sour cream and low fat shredded cheese as options on the table and that went over well too for the non- 21 day people! I also replaced water with home made veggie broth I had in the fridge.

    I have been eating this dish for a couple of years now! So good! I make a big batch and eat it for lunch every day for a week and surprisingly not sick of it by the end of the week, it’s that good!! I usually use turkey burger and celery seasoning and sometimes add in other veggies. But unsing bagged coleslaw is so much easier if you don’t feel like doing a lot of chopping 🙂
