Healthy Chocolate Banana Muffins – 21 Day Fix Approved

Hunter my 4-year-old LOVES to bake, yesterday he said he wanted chocolate cupcake, I said well how about chocolate muffins lol.He agreed, so that’s what we did these are super easy to make! I used chocolate Shakeology but you could use any whey protein I believe. Enjoy


What You Need – Makes 12 Muffins

3 ripe bananas

2 Eggs

3/4 cup Quick oats

2 scoops of chocolate Shakeology

2 T Honey

1 Tsp Baking powder

1 Tsp Baking soda

1/2  Tsp Cinnamon


Instructions –

  1. Preheat oven to 350 degrees , line with silicone or foil liners, or you can use coconut oil to grease the muffin tin
  2. Place all of the ingredients in a blender, (or food processor), and blend until mixture is smooth.
  3. Divide mixture evenly between 12 muffin tins.
  4. Bake for 18-22 minutes, or until toothpick comes out clean.

    Note: Be sure to use either silicone or foil liners with the paper insert removed because they will stick, and they will appear to be “sunk” in as does any muffin made with oats rather than flour!)

    I just made these but substituted 3 scoops of another chocolate protein powder for the 2 scoops of Shakeology protein.

    They baked so nicely and the coconut oil worked beautifully instead of liners. Thanks for the recipe!

    This is for Sarah. Take your scoop of powder and put it into a measuring cup. 1 cup is 8 oz…1/2 cup is 4 oz . etc. Hope this helps

    How do you get 1/3 yellow per muffin? I thought the 3/4 of oats was equal to 1 yellow container, which would be 1/12 yellow per muffin. Do baking soda or baking powder count as yellow somehow? Thank you!

    This sounds delicious however, you cannot bake shakeology because over 115 degrees. Theres a reason no of the ingredients are ever processed over 115 degrees F.
